Watermelon Lemon Coconut Drink
6 cups, seedless watermelon, cut into 1-inch chunks
1/2 cup freshly squeezed lemon juice (about 4 lemons)
1/4  cup sugar
1/4 cup unsweetened lite coconut milk
1 tablespoon freshly chopped mint, or more to taste

Place all ingredients except mint in your Diamond blender and puree until incorporated. Chop the mint into small pieces and stir into the watermelon drink. Remove the pitcher from the base and place in the refrigerator to chill for at least 30 minutes. Stir before serving.
