Avocado Cantaloupe Salad

1/4 cup mayonnaise
3 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1/8 tsp each of salt and pepper
1 large tomato, seeded and diced
1 shallot, minced
1/4 ripe cantaloupe, diced
1/4 green pepper, diced
2 fresh basil leaves, chopped
2 ripe avocados

In a small bowl, whisk mayonnaise, oil, lemon juice, mustard, salt and pepper until thoroughly combined. Add salt and pepper to taste, and a little sugar if desired. Set aside.

Gently toss tomato with shallot, melon, green pepper and chopped basil. Set aside.

Peel avocados and cut lengthwise into thin slices; arrange in fan shape on 4 plates. Top with tomato mixture, then top with reserved dressing, divided evenly. Perfect alongside fish or grilled meats.
